Yes, the Hadith about the person who dies whilst fasting goes to Jannah is authentic?

حَدَّثَنَا حَسَنٌ، وَعَفَّانُ، قَالَا: حَدَّثَنَا حَمَّادُ بْنُ سَلَمَةَ، عَنْ عُثْمَانَ الْبَتِّيِّ، عَنْ نُعَيْمٍ ـ قَالَ عَفَّانُ فِي حَدِيثِهِ ـ ابْنِ أَبِي هِنْدٍ، عَنْ حُذَيْفَةَ قَالَ: أَسْنَدْتُ النَّبِيَّ صَلَّى اللهُ عَلَيْهِ وَسَلَّمَ إِلَى صَدْرِي فَقَالَ: مَنْ قَالَ لَا إِلَهَ إِلَّا اللهُ ـ قَالَ حَسَنٌ: ابْتِغَاءَ وَجْهِ اللهِ ـ خُتِمَ لَهُ بِهَا دَخَلَ الْجَنَّةَ، وَمَنْ صَامَ يَوْمًا ابْتِغَاءَ وَجْهِ اللهِ خُتِمَ لَهُ بِهَا دَخَلَ الْجَنَّةَ، وَمَنْ تَصَدَّقَ بِصَدَقَةٍ ابْتِغَاءَ وَجْهِ اللهِ خُتِمَ لَهُ بِهَا دَخَلَ الْجَنَّةَ 

The Prophet ﷺ said, ‘Whoever says there is no god other than Allah alone, sincerely seeking the pleasure of Allah (Most High), and he dies upon that, will enter paradise. Whoever fasts a day, sincerely seeking the pleasure of Allah (Most High), and he dies upon that, will enter paradise. Whoever gives Sadaqah (charity), sincerely seeking the pleasure of Allah (Most High), and he dies upon that, will enter paradise.’ (Ahmad 23324).

The Hadith above has been considered Sahih by a number of leading classical Hadith scholars. Some contemporary scholars have deemed it to be weak. However, they often refer to it as being Sahih Lighayrihi. Since some of the Imams of Hadith have declared it Sahih, that should be considered to be the sound opinion.

In any case, even if we were to accept that the Hadith is weak, it can still be used as evidence for the issue at hand (see the link below for details).

رَوَاهُ أَحْمَدُ، وَرَوَى الْبَزَّارُ طَرَفًا مِنْهُ فِي الصِّيَامِ فَقَطْ،، وَرِجَالُهُ مُوَثَّقُونَ. (مجمع الزوائد ومنبع الفوائد)

It was narrated by (Imam) Ahmad. (Imam) al-Bazar narrated the part of it that relates to fasting alone. The narrators are reliable. (Imam al-Haythami, Majma al-Zawaid 3919).

رَوَاهُ أَحْمَدُ، وَرِجَالُهُ رِجَالُ الصَّحِيحِ غَيْرَ عُثْمَانَ بْنِ مُسْلِمٍ الْبَتِّيِّ وَهُوَ ثِقَةٌ. (مجمع الزوائد ومنبع الفوائد)

It was narrated by (Imam) Ahmad. His narrators are the narrators of Sahih except for Uthman bin Muslim al-Bati, and he is reliable (Thiqah). (Imam al-Haythami, Majma al-Zawaid 11935).

In the texts (Nusoos) above we find Imam al-Haythami commenting on the narration in Ahmad twice. In both cases he considered the narration to be authentic. Imam Shihaab al-Deen al-Busayri commented on the same Hadith with a very similar chain saying:

قَالَ أَبُو بَكْرِ بْنُ أَبِي شَيْبَةَ: ثَنَا عَفَّانُ، ثَنَا حَمَّادُ بْنُ سَلَمَةَ، عَنْ عُثْمَانَ الْبَتِّيِّ، عَنْ نُعَيْمِ بْنِ أَبِي هِنْدٍ، عَنْ حُذَيْفَةَ- رَضِيَ اللَّهُ عَنْهُ- قَالَ: “كُنْتُ مُسْنِدًا النَّبِيَّ – صَلَّى اللَّهُ عَلَيْهِ وَسَلَّمَ – إِلَى صَدْرِي، قَالَ: فَقَالَ: مَنْ قَالَ: لَا إِلَهَ إِلَّا اللَّهُ، خُتِمَ لَهُ بِهَا دَخَلَ الْجَنَّةَ، وَمَنْ تَصَدَّقَ بِصَدَقَةٍ ابْتِغَاءَ وَجْهِ اللَّهِ خُتِمَ لَهُ بِهَا دَخَلَ الْجَنَّةَ، وَمَنْ صَامَ يَوْمًا ابْتِغَاءَ وَجْهِ اللَّهِ خُتِمَ لَهُ بِهِ دَخَلَ الْجَنَّةَ. هَذَا إِسْنَادٌ صَحِيحٌ. (إتحاف الخيرة المهرة بزوائد المسانيد العشرة)

This chain is sound. (Imam Shihaab al-Deen al-Busayri, Ithaaf al-Khiyarah al-Maharah).

And Allah Most High Knows Best.
